Blueberry Crisp

Ingredient

  • 3 cups fresh blueberries or thawed frozen blueberries 
  • 2 teaspoons all purpose flour 
  • 1/2 teaspoon cinnamon 
  • 2 tablespoons honey 
  • 3 tablespoons margarine 
  • 2 cups shredded wheat bite sized biscuits 
  • 1 teaspoon confectioners' sugar 
Method 

In an ungreased 9 inch pie plate, mix berries with flour and cinnamon until blended. Drizzle with honey. Cover with aluminum foil and bake at 400°F for 30 minutes, or until bubbling. Meanwhile, in a small skillet, melt margarine. Stir in biscuits until well coated. Remove foil from pie plate; spread biscuits over berries. Bake about 10 minutes, or until biscuits are crisp. Cool to warm. Just before serving sprinkle with confectioners' sugar. 

Yield: 6 servings
