cup all purpose flour

cup sugar

teaspoon salt

cups milk

2 egg
yolks

2 tablespoons
butter

1 1/2
teaspoons vanilla

cup whipping cream
Method
Stir
flour, sugar and salt together.
Scald
milk in top of double boiler.
Add
the hot milk to dry ingredients, a little at a time, stirring between additions;
mix well and return to double boiler.
Cook
until thickened, stirring constantly.
Cover
and cook 20 minutes longer.
Beat
egg yolks slightly, add a little of the hot mixture to them, mixing well.
Return
to double boiler and stir for 2 minutes.
Remove
from heat; add butter, vanilla and cream.
Cool
before using.
Yield:
enough filling for large layer cake or 2 dozen medium size eclairs.
