Cream Filling 


 
Ingredients
  • 8 tablespoons all purpose flour 
  • 6 tablespoons sugar 
  • 1/8 teaspoon salt 
  • 2 cups milk 
  • 2 egg yolks 
  • 1 tablespoon butter 
  • 1 teaspoon vanilla 
Method 

Stir flour, sugar and salt together. 
Scald milk in top of double boiler. 
Add hot milk to dry ingredients, a little at a time, stirring between additions; mix well. 
Return to double boiler and cook until thickened, stirring constantly; cover and cook 20 minutes longer. 
Beat egg yolks slightly, add a little of the hot mixture to them, mix well, and return to double boiler; stir for 2 minutes. 
Remove from heat; add butter and vanilla. 
Let cool before using 

Yield: enough for a large layer cake
