Easy Peanut Butter Cookies

Ingredients

• 3/4 cup creamy peanut butter 
• 2 teaspoons butter or margarine 
• 1/3 cup + 2 teaspoons applesauce 
• 1 1/4 cups all purpose flour 
• 1/2 cup white sugar 
• 1 egg 
• 1 teaspoon baking soda 
• 1/4 teaspoon baking powder 
• dash salt 

Method

Preheat oven to 350° F. With an electric mixer on medium speed, combine peanut butter, butter/margarine and applesauce in mixing bowl. Add remaining ingredients and mix well. Roll dough into 1 inch balls and arrange three inches apart on nonstick cookies sheets. Using fork press a crisscross pattern on cookies. Bake until golden brown, about 10 to 12 minutes. Transfer to a wire rack to cool. 

Yield: 5 dozen cookies
