and Nut Pinwheel Cookies
Ingredients
- 2 1/4
cups flour
- 1/2
teaspoon baking soda
- 1/2 cup
butter
- 1/2 cup
white sugar
- 1/2 cup
brown sugar
- 1 egg
- 1/2
teaspoon vanilla
- 1/2
pound pitted dates
- 1/2 cup
white sugar
- 1/2 cup
water
- 1
tablespoon cream
- 1/2
pound English Walnuts (chopped)
Method
Cream
butter, sugar, brown sugar, egg and vanilla together. Sift dry
ingredients together and slowly add to creamed mixture.
Filling
Cook dates, sugar, water and
cream together for five minutes or until thickened. Let stand until
cool then add chopped walnuts.
Chill
the dough and spread with date mixture. Roll up like a jelly roll
and let set overnight. Then slice and bake at 350° F.
10 - 15 minutes or until
golden brown.
