Cream Cheese Cookies

Ingredients

  • 1/2 cup margarine, softened 
  • 3 ounces softened cream cheese 
  • 2 eggs 
  • 4 cups flour 
  • 1/2 teaspoon salt 
  • 1/4 cup powdered sugar 
  • 2 cups sugar 
  • 1 teaspoon vanilla 
  • 1/2 teaspoon lemon extract 
  • 1 teaspoon baking powder 
  • 1/2 cup apricot preserves (or your favorite preserves) 

Method

Preheat oven to 350° F. Cream butter, cream cheese and sugar until light and fluffy. Add eggs, one at a time. Beat well. Stir in vanilla and lemon extracts. Sift together flour, baking powder and salt. Add to cream cheese mixture. Roll dough into a log 18 inches long. 
Place on a sheet of aluminum foil, roll up, and seal ends. Chill for 3 hours. Slice dough 3/8 inch thick rounds and place on baking sheet. Spoon 1/2 teaspoon of your favorite preserves in center of each cookie. Bake 8 - 10 minutes. Remove from baking sheet to cooling rack. Dust with powdered sugar.
