Apricot Jewels

Ingredients

  • 1 1/4 cup all purpose flour  
  • 1/4 cup sugar 
  • 1 1/2 teaspoons baking powder 
  • 1/4 teaspoon salt 
  • 1/2 cup butter or margarine, softened 
  • 3 ounces cream cheese, softened 
  • 1/2 cup flaked coconut 
  • 1/2 cup apricot preserves ** 
Frosting 
 
  • 1 cup powdered sugar 
  • 1/4 cup apricot preserves 
  • 1 tablespoon butter or margarine, softened 
Method 

Heat oven to 350F. 
Lightly spoon flour into measuring cup, level off. In large bowl, combine flour, sugar, baking powder and salt. Using pastry blender or fork, cut in butter and cream cheese until mixture is crumbly. Add coconut and preserves; blend well. Drop by rounded teaspoonfuls onto ungreased cookie sheets. 
Bake at 350 F for 15 to 18 minutes or until golden brown. Immediately remove from cookie sheets; cool. In medium bowl, beat all frosting ingredients until smooth. Frost cooled cookies; allow frosting to set before storing. 

Yield: 3 dozen cookies. 
NOTE: ** If you don't like apricot preserves any preserves will work, I have tried strawberry, raspberry and apple, and they are very good.
