Pineapple Filled

Ingredients
- 1/4 cup
granulated sugar
- 1
tablespoon cornstarch
- 1 cup
crushed pineapple
- 1
teaspoon lemon juice
- 1 cup
flour
- 1
teaspoon salt
- 1 cup
brown sugar
- 1 cup
shortening
- 2 1/2
cups quick oats
Method
Mix
together sugar and cornstarch in a saucepan, add in the undrained
pineapple.
Cook until thick and clear,
add in lemon juice and stir well, take off heat and cool. Mix remaining
dry ingredients together, cut in the shortening making a crumb mixture. Well
grease an 8x12 baking dish, put in 1/2 the crumb mixture, packing down
by hand to form a crust. Spread with pineapple filling.
Sprinkle remaining crumbs over
the top and lightly pack down. Bake in 350°F oven for 45
minutes.
