Coconut Macaroons

Ingredients

  • 3 egg whites 
  • 1/4 teaspoon salt 
  • 1 cup sugar 
  • 3 1/2 cups shredded coconut 
  • 1 teaspoon vanilla extract 

Method

Beat egg whites and salt to soft peaks; gradually beat in sugar until very stiff.  Stir in coconut and vanilla.  Drop by teaspoonfuls onto greased and floured cookie sheets.  
Bake at 325° F. 15 - 20 minutes.  

Yield: 3 dozen macaroons
