Fig Cookies

Ingredients

  • 1/2 cup  butter or margarine; softened
  • 1 cup brown sugar; packed
  • 3 large eggs
  • 1 teaspoon grated lemon peel
  • 1 teaspoon vanilla
  • 1 cup unbleached flour  
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups dried figs; finely chopped

Method

Cream butter and sugar.  Add eggs, peel and vanilla; beat well.  Stir together flour, baking powder, and salt; blend into creamed mixture.  Stir in figs. Pour into greased 13 X 9 X 2 inch baking pan. Bake at 350° F for 25 minutes.  Cool; cut into bars.

Yield: 32 bars.
