Peanut Butter  Cheesecake

Ingredients

  • 1 (10 inch graham cracker crust in a spring form pan)

  • 2 cups peanut butter

  • 1 pound cream cheese, softened

  • 2 tablespoons melted butter

  • 1/2 cup heavy cream; whipped

  • 2 cups sugar

  • 1 tablespoon vanilla

  • 1 cup chocolate chips; melted

  • 1 cup heavy cream; whipped

Method

Beat cream cheese until smooth. Add peanut butter and sugar and blend well. Add vanilla and butter and continue to blend well. Fold in 1/2 cup whipped cream. Place mixture into graham cracker crust. Refrigerate overnight. After refrigeration, pour melted chocolate chips evenly over top and let cool for 2 hours. Garnish with remaining whipped cream.
