Sugar Fudge
Ingredients
- 1 1/2 cups
granulated sugar
- 1 cup
brown sugar
- 1/3 cup
light cream
- 1/3 cup
milk
- 2
tablespoons butter
- 1 teaspoon
vanilla
- 1/2 cup
chopped nuts (optional)
Method
Combine
sugars, cream, milk and butter in heavy 3 quart saucepan. Cook
over medium heat, stirring constantly, until sugar dissolves and mixture
comes to a boil. Cook to soft ball stage (237°
F) without stirring. Remove from heat and let cool to lukewarm (110°
F) by placing pan in cold water. Add vanilla; beat vigorously
until mixture thickens and begins to lose it's gloss.
Stir in chopped nuts and quickly
spread into buttered pan or platter; cut in squares.
Yield: 18 to
20 pieces.
