Ingredients
- 1 cup maple sugar
- 1/2 cup brown sugar
- 1/2 cup water
- 1/4 teaspoon cram of
tartar
- 6 marshmallows; cut
fine
- 1 egg white
- candied cherries or
nut meats
Method
Boil first 4 ingredients
in a saucepan to crack stage 288° F, then add marshmallows; let stand 5
minutes, pour over stiffly beaten egg white, beating constantly. Beat
until light, and when it begins to set, drop from teaspoon onto waxed
paper. Place halved candied cherries or nut meats in center of each piece;
cool.
