Almond
Cupcakes
Ingredients
- 1 1/2
cups all purpose flour
- 2
teaspoons baking powder
- 1/2
teaspoon salt
- 3/4 cup
sugar
- 1/2 cup
milk
- 2 eggs
- 1/3 cup
melted butter
- 1/2
teaspoon vanilla
- 1/2 cup
finely chopped almonds
Method
Stir flour,
baking powder, salt and sugar together.
Beat together the milk, eggs
and melted butter; add to dry ingredients and beat 1 minute a low speed
of electric mixer.
Add vanilla and chopped
almonds; beat 1 more minute. Pour
into greased muffin pans and bake at 350°F 20 to 25 minutes.
When cool, frost as desired
and top with coarsely chopped almonds, toasted or plain.
Yield: 1
1/2 dozen medium size cupcakes
