Cola-Cake 2
Ingredients
- 2 cups
sifted all-purpose flour
- 1
teaspoon baking soda
- 2 cups
sugar
- 1 1/2
cups butter
- 1 1/2
cups miniature marshmallows
- 3
tablespoons unsweetened cocoa powder
- 1 cup
coca cola
- 2 eggs
- 1/2 cup
buttermilk
- 1
teaspoon vanilla
Method
Grease
and flour a 13 x 9 x 2 inch baking pan. Sift
flour and soda into a large bowl.
Stir in sugar. Heat
butter, marshmallows, cocoa and coca cola slowly in a medium size pan. Stirring
constantly, until butter and marshmallows are melted. Do not allow
mixture to boil. Pour over flour mixture, beating well to blend. Beat
eggs in a small bowl until light and fluffy; stir in buttermilk and
vanilla. Beat egg mixture into flour mixture until well blended and
batter is smooth. Pour batter into prepared pan. Bake in a
moderate oven at 350°F, for 50 minutes
or until center springs back
when lightly pressed with fingertip. Remove pan to wire rack. Frost
hot cake with Cola Icing. Cool before cutting
Cola Icing
Combine
1/2 cup butter, 6 tablespoons coca cola and 3 tablespoons unsweetened
cocoa powder in a medium size saucepan. Heat to boiling, stirring
constantly; remove pan from heat. Stir in 1 package confectioners'
sugar until smooth. Stir in 1 cup chopped pecans and 1 teaspoon
vanilla.
