Carrot Cake 

Ingredients 

  • 1 1/2  cups vegetable oil 
  • 2 cups sugar 
  • 4 whole eggs 
  • 2 cups flour, all-purpose
  • 2 teaspoons ground cinnamon 
  • 1 1/2 teaspoons baking soda 
  • 1/2 teaspoon salt 
  • 3 cups carrots, grated 
  • orange zest, from 1 whole orange 
Method 

In large mixing bowl, beat together oil and sugar. Add eggs, one at a time, beating well after each addition. Sift together flour, cinnamon, baking soda and salt. Add to egg mixture and beat well. Stir in carrots and orange zest. Pour into greased 9 x 13 pan. 
Bake at 350°F for 45 minutes, then test for  doneness. Cake may need up to 60 minutes. 
When cool, frost with a Cream Cheese Frosting
