Carrot Cake 1

Ingredients 

  • 1 cup sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups grated raw carrot
  • 1 1/2 cups grated apples about 3 medium
  • 1 cup golden raisins
  • 1/2 cup chopped nuts
Method

In a large bowl combine sugar, oil and eggs, and beat until slightly thickened. Mix the flour, soda, salt and cinnamon, then add to the egg mixture. Add the carrots, apples, raisins and nuts, and blend well. Pour into a greased and floured 9 by 12 inch pan. Bake at 350°F for 35 to 40 minutes. Cool. When cool, frost with a Cream Cheese Frosting
