Basket Goodies for  Breakfast

What a great gift for the day after Christmas or even Christmas morning.
What you will need:

  1. Pancake mix, that you will make
  2. recipe card with the recipe printed on it
  3. decorative jar; decorated with
  4. Christmas ribbon or twine and a made by label
  5. a bottle of real maple syrup
  1. a pretty pitcher for the syrup
  2. pancake shaping rings
  3. basket
  4. Christmas bow
  5. cellophane Christmas wrap
Instructions

Mix the pancake mix, recipe below, place in decorative jar.
Print or type recipe and instructions on a recipe card, punch a hole in the top of the card and thread the Christmas ribbon, or Christmas twine through and tie around neck of jar.
Place lid on and make sure it's very tight, place Made by: label on top jar and sign your name.
Decorate the basket and there is two ways you can do this.
1. Take Christmas ribbon and wrap the handle of the basket with it. Place a dot of hot glue at one end and keep wrapping the ribbon around the handle, until you reach the other end of the handle, and place another dot of hot glue to secure ribbon. Put a big bow either in the middle of the handle or where the handle starts on the side of the basket.
2. After placing all the articles in the basket, completely cover the basket with Christmas cellophane, gather together at the top, tie with Christmas twine and place a big bow.
Both are very pretty.

Gingerbread Pancake Mix
  • 1 cup cake flour
  • 1 cup all purpose flour
  • 2/3 cup mini semi sweet chocolate chips
  • 3 tablespoons sugar
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cloves

 
Combine all ingredients.
Transfer to decorative jar. Attach following recipe for making pancakes.
Place flour mixture in large bowl. whisk together 1 3/4 cups room temperature buttermilk, 2 tablespoons room temperature eggs, 6 tablespoons melted butter, 1/4 cup molasses and 2 room temperature egg yolks; stir into flour mixture until just combined.
Coat nonstick skillet with cooking spray; set over medium heat. Pour batter, in batches, 1/4 cup at a time into skillet.
Cook pancakes, turning once, until golden and cooked through, about 2 minutes per side.
Yield: 20 pancakes
